“When we got back to the office, Jessica Coen said she saw a CopCab just the other night. We don’t know about you, but we find this kind of alarming. It’s just totally unfair. When cops drive cop cars, you at least get a warning. When one pulls into view, you have time to make the decision to eat your joint or not jaywalk or not speed or, you know, stand up straight or whatever. But if cops are riding around in taxis, that throws off the whole system. It’s like cheating. Plus, it’s going to make us paranoid. Because if cops are in taxis, they could be anywhere. Ice-cream trucks. Pedicabs. Those funny old antique cars. How do you even know to pull over for them? We would have asked the guy in the car today — but he looked kind of busy.”

It takes a long time to get there, everyone has funny accents, and once you’re there you’re stuck, since you have to get on a plane to get anywhere else. It’s like you’re marooned in the outback of Middle America. Plus, it’s not sunny and they don’t have kangaroos, so what’s the point? Apparently, money. According to the Chicago Tribune, layoffs on Wall Street have caused a number of finance people to move west. They’re just as surprised as we are.”

Or the cream, crème fraîche, white flour, olive oil, fried batters, béchamel, roux, mayonnaise and fatty beef. “Emeril Green” on Planet Green, a new offering by the Discovery Networks, is supposed to promote easy, healthy ways to prepare nutritious, eco-friendly dishes. As he strolls the aisles of a Whole Foods Market, Mr. Lagasse mainly points out organic foods while waving a green felt-tip pen.

Recent recipes have included chocolate soufflé (cage-free eggs) and fried, breaded eggplant topped by a white shrimp-crab béchamel sauce. The diet lentil salad he prepared for a woman trying to maintain her 130-pound weight loss came topped with a fried egg. Layering organic tomato, lettuce and avocado on a hamburger — on a brioche bun — for a picky teenager, Mr. Lagasse, the Louisiana-trained chef, implored her to let him add mayonnaise.

“How about just a little bit?” he urged. “Because it’s homemade.”
