I didn’t see it coming. I figured once they gave me a visa, I wouldn’t imagine they wouldn’t allow me to come in later. That was a big shock. I wasn’t expecting to get a call the evening before I was leaving for Beijing.

We’ve never understood why people move to Chicago. It’s like moving to Australia or something. It takes a long time to get there, everyone has funny accents, and once you’re there you’re stuck, since you have to get on a plane to get anywhere else. It’s like you’re marooned in the outback of Middle America. Plus, it’s not sunny and they don’t have kangaroos, so what’s the point? Apparently, money. According to the Chicago Tribune, layoffs on Wall Street have caused a number of finance people to move west. They’re just as surprised as we are.

KFC Canada has introduced a new soy-based, mock-chicken sandwich to its menu, and a promise to treat it’s chickens humanely. On Monday, Pamela Anderson, one of PETA’s A-list celebrity campaigners enjoyed her first taste of victory, by surprising the unsuspecting staff at this location in the city’s West End. “It’s very Canadian of them. Very forward thinking. I’m very proud Canada KFC was the first to do it. Hopefully everyone else follows suit,” she said.

Emeril Lagasse cannot put away the butter. Or the cream, crème fraîche, white flour, olive oil, fried batters, béchamel, roux, mayonnaise and fatty beef. “Emeril Green” on Planet Green, a new offering by the Discovery Networks, is supposed to promote easy, healthy ways to prepare nutritious, eco-friendly dishes. As he strolls the aisles of a Whole Foods Market, Mr. Lagasse mainly points out organic foods while waving a green felt-tip pen.

Recent recipes have included chocolate soufflé (cage-free eggs) and fried, breaded eggplant topped by a white shrimp-crab béchamel sauce. The diet lentil salad he prepared for a woman trying to maintain her 130-pound weight loss came topped with a fried egg. Layering organic tomato, lettuce and avocado on a hamburger — on a brioche bun — for a picky teenager, Mr. Lagasse, the Louisiana-trained chef, implored her to let him add mayonnaise.

“How about just a little bit?” he urged. “Because it’s homemade.”
